Fava is made from the yellow split peas, cultivated on the volcanic island of Santorini. They originate from the plant known as Lathyrus Clymenum L. and have been found growing on the island for 3,500 years now. Santorini fava is a Protected Designation of Origin Product. It is characterized by a strong yellow colour and a sweetish taste. The special pleasure it offers, goes hand in hand with its high nutritional value. Cook the yellow split peas based on the traditional recipe and serve them with capers and sun-dried tomatoes, onion slices and grilled octopus. You can also make delicious fava patties.
