These particular beans come from the town of Chrysoupoli, located in the centre of the plain of the river Nestos, near Kavala. They are medium-sized and boil easily, after of course you have soaked them overnight. They are the ideal solution for a vegetarian diet. Although they are considered to be a "winter food", cooked as a bean soup, there are, however, a great many recipes one can use them in so that they may be consumed throughout the year. Try them in fresh summer salads or cook them with sautéed greens, sausages, beef or minced meat.
