From the regional varieties Asyrtiko (85%) and Aidani (15%) we get a splendid and unique wine. The grapes are sun-dried for 8-10 days, followed by slow fermentation which stops naturally due to the high sugar content. The wine is then left to age in oak barrels for at least 2 years. The result is a wine which is characterized by an orangy-red colour with brown hues, aromas of sweet spices (cloves, cinnamon) and dried peaches. It has a full, velvet and strong honey flavour which is balanced wonderfully with its level of acidity. It is served on its own at 6-8° C or together with fruit, syrupy sweets with nuts, crème caramel and crème brûlée.
