A cheese matured in oil!
Ladotyri cheese from Andros, produced by the Asoutis family, is a hard cheese from cow's milk, which is left to mature for 40 days in cool and shady areas at first, and then, for another 15 days, in oil. In the end, it is covered with mountain herbs, like rosemary, oregano, savory etc. With a slightly yellow colour, strong flavour and a wonderful spicy aroma, "Asoutis" ladotyri from Andros is excellent in cheese platters combined with white wine from the Malagouzia aromatic variety.
