The graviera (gruyère) produced in Andros, at the cheese dairy of Asoutis family, is a special cheese with a hard texture, rich and deep aroma and a buttery and full bodied flavour. This cheese has matured for at least one year. You can grate the "Asoutis" graviera cheese from Andros over pasta for extra flavour, add it in soufflés or arrange it on a cheese platter.
